The Australian lamb
industry produces
16 million lambsannually,
88 per cent of whichare sold on the domestic market. These lambs come from a tired
breeding
structure in which cross-bred ewes(usually Border
Leiccster XMerino),
derived from Merinowool-growing flocks,
are
joined
to short wool rams such as the Dorset Horn or Southdown. Other breeds used to alesser extent include Dorset Horn x
Merino,
Corriedale and Polworth ewes, and BorderLeicester, Ryeland,
Suffolk andRomney
Marsh sires.Many
trials have shown thesuperiority
of theBorder Leicester x Merino and Dorset Horn x Merino ewes
joined
to Dorset Horn sires for theproduction
ofprime
lamb.Lambing percentages
vary between 90-170%
and lambs from thesecrosses grow at rates of 0.24-0.30
kg !day.
With the decline in Australian traditional
export markets,
interest has turned to the Middle Eastern Muslimmarket,
whichrequires
a heavier( 22 - 2 8 kg),
leaner carcass. Suffolk sires arebeing
used toproduce
therequired type
of lamb( 4 8 kg liveweight)
at 9months of age.Young
Merino
sheep
up to 3 1/ 2
yrs of age arecurrently supplied
to the Muslim market as chilled car- casses. To increase theprofitable production
of thistype
of carcass in Merinowool growing flocks,
farmers areincreasing
theproportion
of ewes from 40 to 60per cent
withoutincreasing
flock size.
The
large
flocks of feralgoats
in Australia have beenintermittently
harvested toprovide
small
quantities
of meat forexport (for example
6 00okg exported
to France1974/75 ).

goats
areslaughtered
each year andyield
carcasses between 10-22kg according
to age.Studies of these
goats
have shown thatthey
areprolific (kidding percentage
above 150 percent)
and the kids grow at about 1.0kg !week
untilweaning.
As thesegoats preferentially
browse there is a
large potential
use for them inrangeland management
and studies havebegun
to
improve
their meatproduction by
selection andbreeding.
