size ofCanada's national dairy herd,the sourceofour milk supply, stood at2,132,500 head onJuly 1, 1975. Althoughtherehasbeen

aslightdecline in numbersoverthe pastfew years, milkproduction per

cow

hasrisen steadily from

Total milk production

ⁱⁿ southwestern Scotland. Recognizedas a breedasearlyas 1814, the Ayrshirewasdeveloped throughimprovement of the native Scottishcattle bycrossingwith DutchorTeeswater West Highlandand Channel Island cattle.

Canadian History:

The

first importation on record was

made

in 1821 by Lord Dalhousie, the Governor-General.

The

Montreal Agricul- tural Society imported Ayrshires in 1827,as didJ.B. Ewartof Dundas,Ontario in 1845.

Characteristics: Distinctive redand white markings are preferable, but Ayrshires

may

be red ofanyshade, mahogany,
