RÉSUMÉ
Dans la
présente étude,
les effets durapport
feuille-fruit sur lecomportement productif, végétatif
etqualitatif
ont étéanalysés.
Les arrière-effets du niveau de rendement surlateneurenglucides
desparties pérennes,
surlacroissance des racineset sur la chlorose ontégalement
été étudiés.Dans une
première
séried'essais,
l'influence durapport
feuille-fruit sur lerendement,
laqualité
des raisins et la croissance de lavigne
a été étudiée enfaisant varier la hauteur de la haie foliaire et
l'interligne
ainsi que le niveau de rendement parsuppression
de grappes ou réduction du nombre de rameaux. Les essais ont été réalisés enplein champ
dans les domainesexpérimentaux
de laStation fédérale de
Changins,
àPully (VD), Changins (VD)
etLeytron (VS),
surles
cépages
Chasselas etGamay.
En faisant augmenter la hauteur de la haie foliaire, le rendement par cep a
légèrement progressé
et la teneur en sucres des moûts s'est améliorée. Lesrapports «poids
des bois de taille parkg
deraisin»,
«surface foliaireexposée
parkg
de raisin» et «surface externe de couvertvégétal
parkg
de raisin»permettent
de bienexpliquer
l'évolution de la richesse en sucres des raisins. Il a fallu enmoyenne des
années,
220 g de sarment parkg
de raisin ou 1 m2 de surface foliaireexposée
ou de couvertvégétal
parkg
de raisin pour obtenir un taux desucres
optimal.

Jusqu'à
unecertaine limite(2
md'interligne),
ilaétépossible
de compenser l'effet de l'écartement des rangs par un accroissement de la haie foliaire. La hauteur de la haie de
végétation
n'a pas exercé d'effets trèsmarqués
sur l'acidité des moûts et sur le taux de
pourriture
des raisins,quelle
que soit lalargeur
del'interligne.
Laréduction du rendement par
suppression
de grappes a influencépositivement
letaux desucres des moûts. La corrélation entreces deux
paramètres
a été trèsétroite et les
pentes
desrégressions
linéaires se sont situées en moyenne vers 1 °Oe par 100g/m2
de raisin. La surface externe de couvertvégétal
parkg
deraisin a été étroitement corrélée avec la richesse en sucres. En moyenne, 1 à 1,2 m2 de couvert
végétal
parkg
de raisin a été nécessaire pour obtenir une teneur en sucres suffisante. En annéeclimatiquement défavorable,
cette valeur devraitêtrelégèrement augmentée.
La meilleureépoque
de limitation s'est située entre la nouaison et la véraison. L'évaluation du rendementprobable dépend
del'estimation correcte du
poids
moyen de la baie. Celui-ciavarié considérablement selon lesparcelles
et les années. La limitation de récolte a entraîné unaccroissement du
poids
des baies de 5 à 10 %. L'excès de récolte a réduit lepotentiel
de rendement de l'année suivante(fertilité
desbourgeons inférieure)
etle
développement végétatif.
Ilaégalement provoqué
desapparitions
de chlorose.L'allongement
de lapériode
de maturation(vendange tardive)
n'a que faiblementpermis
de compenser les effets des fortesproductions.
La diminution du nombre de rameauxpar cep aamené une baisse du rendement
non
proportionnelle
au nombre de bois. Unphénomène
decompensation
a été constaté au niveau de la fertilité desbourgeons
et dupoids
des grappesqui
onteutendance à s'accroîtreavecla diminution du nombre derameaux. L'amélioration de la fertilité est
expliquée principalement
par lepoids
individuel du sarment conservé à la taille. La réduction du nombre de pousses par cepa fait progresserproportionnellement
lepoids
moyen dusarment. L'amélioration dutauxdesucres, consécutive à la baisse du rendement obtenue par réduction de lacharge
enrameaux, a été moins
importante (0,4
°Oe par 100g/m2)
que celleenregistrée
dans les essais de limitation par
suppression
de grappes. Lepoids
des bois de taille parkg
de raisin et la surface foliaireexposée
parkg
de raisin ont été ànouveau bien corrélés avec le taux de sucres des
moûts,
avec desrapports optimaux proches
deceuxobtenus dans les essais de variation de la haie foliaire et dedégrappage.
Lasurfacefoliaireexposée
est restéepratiquement
constantedans toutes les
variantes,
ledéveloppement
des entre-coeursayant
étéplus important lorsque
lacharge
en rameaux diminuait.Dansun deuxièmegroupe d'essais de
plein champ
etdevignes
en pots, l'influence du niveau de rendement surl'apparition
de lachlorose,
sur lateneurenglucides
de réserve des
parties pérennes
et sur la croissance des racines aétéanalysée.
La variation de rendement a été obtenue en
supprimant
des grappesaprès
lanouaison. Différents
porte-greffe
ont étécomparés.
Les essais ont été réalisésavec les
cépages
Chasselas etGamay.
L'essai de
plein champ
a clairement démontré que des excès de rendementpouvaient
provoquerd'importantes apparitions
de chlorose l'année suivante. Lephénomène
a étéplus marqué lorsque
lesprécipitations
duprintemps (avril-juin)
étaient
importantes.
Il aété observé denettesdifférences decomportement
entre lesporte-greffe
utilisés. Le 3309, le 5BB,
le 5 C et le S04 se sont avérés très sensibles à lasurcharge,
alors que dans l'ordredécroissant,
le 333EM,
le41 B et le Fercal l'ont étébeaucoup
moins. La réduction de la chlorose due à la limitation de rendement s'estproduite
avec tous lesporte-greffe
testés. Le niveau de réduction parrapport
au témoin non limité a varié selon lesporte-greffe
de 32 à81 %.
Dans les essais en
pots,
lesanalyses
deshydrates
de carbone de réserve accumulésdans les sarments, letronc et les racinesont montré que la limitation derendement favorisait lestockage
desglucides
totauxdans lesparties pérennes.
C'estsurtoutau niveau de lateneurenamidon des racines que l'effetaété le
plus marqué,
les sucres réducteursayant
eu tendance àaugmenter lorsque
lesrendements étaient élevés l'année
précédente.
La diminution de la teneur enamidon des
racines,
consécutive aux forts niveaux antérieurs derendement,
a étéplus marquée
pour le5BB que pour le Fercal. Il aété observé que la croissance desjeunes
racinescommençait
tard dans la saison(fin mai,
débutjuin),
aumomentoù la croissance des rameaux
atteignait
environ 50 cm. Les ceps où la récolte avait été fortement limitée l'annéeprécédente
ontdéveloppé plus
de racines endébut de
croissance,
cequi pourrait expliquer
leur meilleure résistance à la chlorose. Au niveau desporte-greffe,
le5BBaglobalement
forméplus
de radicelles que le Fercal et le 3309.Il

experiments,
the influence of the ratiofoliage/fruit
onyield
fruitcomposition,
andgrowth
of the vine were studiedby varying
theheight
of thefoliar
hedge,
the distance between rowsand thecropping level,
which waslimited eitherby
clusterthinning
or shootthinning.
The trials wereperformed
in thevineyards
of the FédéralAgricultural
Research Station ofChangins
atPully (VD), Changins (VD)
andLeytron (VS)
with the cvs. Chasselas andGamay.
Increasing
theheight
of the leaf canopy resulted in aslight
increase inyield
and insugar content of the must. The
relationships «weight
ofpruning

agood explanation
of the sugarcontent of grapes. On average,220g ofcanesoronesquare meterof leafsurfaceexposed

of fruit was necessary in orderto obtain anopti¬
mum
proportion
of sugars in the must. Atoo low ratio between leaf surface and fruit resulted in alowering
of starch content of roots and in the appearance of chlorosis thefollowing
year.Increasing
the distance between rows resulted in alowerfoliar surface
exposed
tolight
per hectare.Up
toacertain limit(2
mbetweenrows),
it ispossible
tocompensate this effectby increasing
theheight
of the foliarhedge.
The variation of thisheight
did not affectmarkedly
theacidity
of the mustand grape rot,
independently
of the distance between rows.Reducing yield by
clusterthinning
resulted in an increase in sugarcontentof the must.Régression analysis
showed that an increase ofyield
of 100g/m2
of leafarea caused a decrease of one
degree
Oechsle on the must soluble solids. The externalsurface of the canopy perkg
of fruitwasclosely
correlatedwith the sugar content of grapes. On average, 1-1,2 m2offoliage
surface perkg
of fruit wasnecessary for
obtaining
a sufficient sugarcontent. In aclimatically
unfavourable year, this value should beslightly
increased. The besttiming
forlimiting
theyield
wasshowntobe between fruitsetand veraison. Anaccurate
yield
forecastdépends
on a correct détermination of the mean
berry weight.
Thisweight
variedconsiderably according
to the situation of thevineyard
and from year to year.Limiting
the number of clusters resulted in an increase ofberry weight
of 5-10 %.An excessive
production
reduced theyield potential
for thefollowing
year(reduced fertility
ofbuds)
aswell asthevégétative growth.
It caused also thedevelopment
of chlorosis.
Increasing
theperiod
of maturation(late vintage) only slightly
compensated
for the effects ofheavy yields.
Reducing
the number of shoots per vine resulted in a decrease onyield
thatwasnot
proportional
to the number of shoots. Acompensation phenomenon
wasobserved at the level of bud
fertility
and clusterweight,
both of which tended to increase when the number of shoots was lower. The increase infertility
resultedmainly
from thehigher weight
of thecane left atpruning. Reducing
the number of shoots per vine favoured the mean caneweight.
Theimprovement
in the sugar content of the must due to the limitation ofyield
obtained in this way was lessimportant (0,4 degree
Oechsle per 100g/m2)
than when clustersweresuppressed.
The
weight
ofpruning
wood perkg
of fruit and the foliar surfaceexposed
tolight
showed
again
agood
corrélation with the sugarcontentof the must, withoptimal
ratios closetothoseobtained in trials where canopy varied in surface and clusters
were
suppressed.
In theprésent experiment,
thefoliar surfaceexposed
remainedpractically
the same, as thedevelopment
ofaxillary
buds increased when the numberof shoots was reduced.In a second group of
experiments
in the field and withpotted vines,
the influenceof
yield
level onchlorosis,
onthe reservecarbohydrates
ofperennial parts
of thevines and on root
growth
wasanalysed, using
the cvs Chasselas andGamay.
Yield variation wasobtained
by
clusterthinning
after fruitset. Several rootstockswere
compared.
The field
experiment clearly
showed that excessiveyield
couldproduce
severesymptoms
of chlorosis in thefollowing
year. Thisphenomenon
was more intensewhen
spring
rain(April
toJune)
was abundant. Clear différencesappeared depending
on the rootstockused,
3309, 5BB,
5 Cand S04being
verysensitive,
whereas indecreasing
order 333EM,
41 B and Fercal were much lesssensitive.Compared
to unthinnedcontrols, limiting yield
resulted in less chlorosis in thesubséquent
season in ail rootstocks tested, with a responseranging
32 to 81 %less chlorosis incidence
depending
on rootstock.In
experiments
withpotted vines, analyses
ofreservecarbohydrates
in the vinestock and its roots showed thatyield
limitation favoured the accumulation of non-struc¬tural carbon in the
perennial parts
of theplant.
This effect was mostpronounced
for the starch contentof roots,astheamountofreducing
sugars tendedtoincrease whenyield
washigher.
Thisphenomenon
was more évident with 5 BB than with Fercal. Growth of young rootswas showntobegin
late in theseason(end
ofMay beginning
ofJune),
when shoot were about 50 cmlong.
The vines whoseyield
had been
severely
limited theprevious
yeardeveloped
moreroots atthebeginning
of the
growth
season, a fact that couldexplain
a better résistance to chlorosis.5 BB
developed
more radicels than Fercal and 3309.III

untersucht worden. Dièse Feldversuche wurden in denRebbergen
derEidgenôssischen Forschungsanstalt Changins
inPully (VD), Changins (VD)
undLeytron (VS)
auf Rebsorten Chasselas undGamay durchgefùhrt.
Das Erhôhen der Laubwand fùhrte zu einer leichten
Ertragssteigerung
undZunahme des
Zuckergehaltes
im Most. DieBeziehungen «Schnittholzgewicht
prokg
Trauben»,«exponierte
Blattflâche prokg
Trauben» und «âussere Laubwandflàche prokg
Trauben» erlauben einegute Interprétation
derZuckeranreicherung
der Beeren. Um einenoptimalen Zuckergehalt
zu erreichen,mùssen im Durchschnitt der Jahre
folgende
Kriterien erfûllt sein : 220 g Schnittholz prokg
Trauben oder 1 m2exponierte
resp. àussere Laubwandflàche prokg
Trauben. Ein kleineres Blatt/Fruchtverhàltnisverringerte
denStàrkegehalt
derWurzeln und erhôhte dasChloroserisiko im

des Reihenabstandes fùhrte zu einer kleineren
exponierte
Blattflâche pro m2 Standraum derRebe. Biszueinemgewissen
Ausmass(2
mReihenbreite)
konnteder Einfluss des Abstandes durch Erhôhen der Laubwand
kompensiert
werden.Die Laubwandhôhe-
unabhàngig
vom Reihenabstand-hatte weder einen grossen Einfluss auf die Mostsàure noch auf die Traubenfàulnis.Die
Ertragsbeschrànkung
durch Abschneiden von Trauben beeinflusste dieMostqualitàt positiv.
Die Korrelation dieser beiden Parameter war sehr eng. DieRegressionsrechnung ergab,
dass mit einer Zunahme desErtrages
um100
g/m2,
dasMostgewicht
um1°Oechsle abnahm. Eine enge Korrelation bestand auch zwischen àussererLaubwandflàche undMostzuckergehalt.
Im Durchschnitt brauchte es 1 bis 1,2 m2Laub prokg
Trauben, um einegenùgende
Qualitàt zuerzielen. In
ungùnstigen
Jahren dùrfte dieser Wert etwas hôher sein. Der besteZeitpunkt
des Traubenausdùnnensliegt
zwischen Fruchtansatz undFarbumschlag.
Die
Genauigkeit
derErnteprognose hàngt
von der exaktenSchàtzung
desBeerengewichtes
ab. Dièses variiert starkje
nachLage
und Jahr. DieErtragsreduktion
fùhrte zu einer Zunahme desBeerengewichtes
von 5-10%. Zuhohe
Ertràge
haben daskùnftige Ertragspotential
desfolgenden
Jahres reduziert(geringere Augenfruchtbarkeit )
und dieWuchskraftgeschwàcht.
Vermehrttratimnàchsten Jahr auch die Chlorose auf. Durch

Die Reduktion der Triebzahl pro Stock fùhrte aber nichtzu einem

beruhtdarauf,
dass mitabnehmender Triebzahl sowohl
Knospenfruchtbarkeit
als auchTraubengewicht
tendenziell zunahmen. Es besteht eine enge
Beziehung
zwischen individuellemSchnittholzgewicht
der Ruten und verbesserterAugenfruchtbarkeit.
DasRutengewicht
nimmt mit zunehmender Triebzahl ab.Von kleinererBedeutung
istder
Zusammenhang
zwischen Triebzahl und Gùte der Trauben: Bei einemMehrertrag
von 100g/m2
nimmt derZuckergehalt
um 0,4 "Oechsle ab. ImGegensatz
dazu war das Ausdùnnen von Traubenwirkungsvoller.
DasSchnittholzgewicht

Trauben und dieexponierte
Blattflâche prokg
Traubenwaren
gut
korreliert mit derMostqualitàt. Àhnliche Ergebnisse
resultierten beim Variieren der Laubwandhôhe und dem Entfemen von Trauben.Dieexponierte
Laubflàche bliebbeiallenVarianten konstant. Die
Geiztriebentwicklung
verbesserte sich mit abnehmender Triebzahl pro Rebe.In einer zweiten Versuchsserie mit Freiland- und
Topfreben
derSortenChasselasund
Gamay,
wurde der Einfluss derErtragshôhe
auf das Auftreten derChlorose,
der
Reservestoffeinlagerung
in diemehrjàhrigen Reborgane
und dasWurzelwachstum untersucht. Die unterschiedliche
Stockbelastung
konnte durch Entfemen von Trauben nach dem Fruchtansatz erreicht werden. Ebenfallsverglichen
wurde das Verhalten verschiedenerUnterlagen.
Freilandversuche
zeigten deutlich,
dass an ùberlasteten Reben die Chlorose im nàchsten Jahr verstàrkt inErscheinung
trat. Nach grossenFrùhjahrsregen (April
-Juni)
verschàrfte sich dièse Situation. Je nach verwendeterUnterlage
liessen sich deutliche Unterschiede erkennen: Die 3309,
5BB,
5C undSÔ4 reagierten empfindlich
auf einenÙberertrag. Eindeutig weniger anfâllig
erwiesensich die Reben auf 333 EM, 41B und Fercal. Bei allen im Versuch stehenden
Unterlagen
tratmit einerErntebeschrànkung
dieChloroseweniger
auf.Verglichen
mit der Kontrolle
(keine Ertragsbeschrànkung), betrug
dièse Reduktionje
nachUnterlage
32 bis 81%.Die
