GC-MS-O is very helpful to identify odorants in aromas. However, there is a gap between this individual characterization and

the effective contribution of compounds to aromas, notably due various interactions. Thus, many aroma investigations turn to

reconstituted models and recombination experiments with chemicals, a valuable but time-consuming approach.

InnOscent device was designed to realize both conventional GC-MS-O analysis and recombination-omission experiments.

These capabilities are illustrated hereafter through a wine aroma analysis and contribution of odorants to global aroma was

evaluated.

 InnOscent device permits to achieve both conventional GC-O analysis and recombination or omission experiments,

enabling a comprehensive analysis of aromas.

 It offers a valuable alternative to current approaches notably those using chemicals and

overcome limitations related to identification, quantitation, and commercial availability of

compounds.

However, the mixture of the only major odorants

does not recreate the odor of the original wine.

 Freeing from chemicals, InnOscent makes it possible to evaluate the contribution of any

compound to an overall aroma.

Hidden reference

The similarity of the hidden reference vs reference,

is scored at 8,2/10 instead of 10, due to natural

reluctance of judges to use ends scale.
