Carcass
conformation is not very favourable but is better whenbecoming
morecompact as the
carcassweight
increases. Iiid carcasses are characterizedby
a lowproportion
of fat andby
ahigh muscle /carcass
ratio.Proportions
of different tissues of shoulder("6paule")
orleg ("gigot")
aregood predictors
of fat, muscle and boneproportions
of the carcass. However, mesenteric("toilette")
fat and feet are alsogood predictors
for carcass fat and for carcass muscle andbone, respectively.
In a taste
panel
ofheavy
kids( 7 - 13 kg
ofcarcass), general opinion
was rather favourable(6 %
ofslightly
or very unfavourableopinions
onchops,
9%
onshoulder).
In
France,
heavier kid carcassproduction might
be considered in the future.Variations in the adipose tissue composition

kids were allotted to three groups and received three different levels of milkreplacer.
Three kids in each group wereslaughtered
beforeweaning,
and 8 kids at about 27kg
ofliveweight.
Thequantity
of milk consumed had little effect onfatty
acid compo- sition of unweaned kidadipose
tissue. Afterweaning,
mesenteric("toilette"), pericardiac
andperirenal
fat becameparticularly
rich in stearic acid. Thepercentage
of minor acids(branched
and odd-carbon
acids)
of subcutaneous fat increased. Our resultsgive
two indexes on weanedkids which are,
respectively,
an estimate of theproportion
of saturatedfatty
acids(stearic
acidespecially
in internalfat)
and of minor acids in subcutaneous fat. Thehe-goat origin
affectedthese indexes
significantly. Moreover, high
intake of milkreplacer
increased theproportion
of minor acids in subcutaneous fat.
